Ingredients

For the Mashed Potatoes

  • 2 pounds Potatoes Yukon Gold or Russet recommended for creaminess
  • 4 tablespoons Butter Add more for additional creaminess if desired

For the Garlic Shrimp

  • 1 pound Shrimp Fresh shrimp recommended for best flavor and texture
  • 1 teaspoon Paprika
  • 1 cup Heavy cream Adjust based on creaminess preference
  • 1/2 cup Parmesan cheese Can substitute with other cheeses if desired
  • 4 cloves Garlic Minced
  • 1 teaspoon Fresh thyme For flavor; can substitute with dried thyme
  • Salt Salt To taste
  • Pepper Pepper To taste

Instructions

Prepare the Mashed Potatoes

  • Cook the potatoes in a large pot of boiling salted water until tender.
  • Drain the potatoes and return to the pot with butter, then mash until smooth. Set aside.

Cook the Shrimp

  • In a skillet over medium heat, melt butter and add the shrimp, seasoning with paprika, salt, and pepper.
  • Cook the shrimp until it turns pink, about 3-4 minutes.
  • Remove the shrimp and set aside.

Make the Garlic Sauce

  • In the same skillet, add minced garlic and sauté until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer.
  • Stir in the Parmesan cheese and fresh thyme, and season with salt and pepper.
  • Return the shrimp to the skillet and combine well.

Serve the Dish

  • Serve the shrimp over the mashed potatoes and drizzle with extra sauce.
  • Garnish with additional fresh thyme or chopped parsley if desired.

Notes

To maintain a creamy texture when reheating leftovers, add a splash of water or additional cream. Not recommended to freeze as potatoes may change texture.
