Ingredients

For the Lemon Pudding Layer

  • 1 package lemon pudding mix
  • 2 cups milk as per package instructions

For the Whipped Cream

  • 1 cup heavy cream chilled for better whipping
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Other Layers

  • 1 cup crushed meringue cookies
  • 1 cup lemon curd preferably homemade for best flavor
  • Zest of 1 lemon for garnish
  • Fresh mint leaves for garnish

Instructions

Preparation

  • Prepare the lemon pudding mix according to package instructions using milk. Let it chill in the refrigerator.
  • In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.

Layering

  • In a large trifle dish or bowl, layer half of the lemon pudding, followed by half of the lemon curd, and half of the crushed meringue cookies.
  • Repeat the layers with the remaining lemon pudding, lemon curd, and meringue cookies.

Finishing Touch

  • Top with whipped cream and sprinkle with lemon zest.
  • Garnish with fresh mint leaves.
  • Chill for at least 2 hours before serving.

Notes

For serving, scoop portions into individual bowls or dessert glasses. This dessert is refreshing and best served chilled. Store leftovers in an airtight container in the refrigerator, best eaten within 2-3 days due to meringue softening over time.
