Ingredients

  • 2 medium medium zucchini Washed and trimmed
  • ½ cup Parmesan cheese, freshly grated
  • ¼ cup blanched almond flour
  • teaspoons sea salt, divided Used in multiple steps
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1/8 teaspoon ground cayenne Optional for added spice
  • tablespoons extra virgin olive oil Used for coating
  • 1 spray Avocado oil cooking spray For air fryer basket
  • to taste Freshly grated parmesan or chopped parsley Optional for serving

Instructions

Preparation

  • Wash and trim the zucchini, then slice lengthwise and scoop out or trim the seeded center.
  • Toss the zucchini sticks with 1 teaspoon of sea salt and let them sit for 15 minutes to draw out moisture.

Create Coating

  • In a shallow bowl, whisk together the Parmesan cheese, almond flour, remaining sea salt, Italian seasoning, garlic powder, black pepper, and cayenne.

Combine Ingredients

  • Pat the zucchini dry, then drizzle it with olive oil and toss to coat.
  • Coat the zucchini sticks in the Parmesan mixture.

Cook

  • Set your air fryer to 400°F (200°C) and spray the basket with cooking spray.
  • Place the zucchini in a single layer in the basket.
  • Air fry the zucchini fries for 8-10 minutes, flipping halfway through, until they are tender and crispy.

Notes

These zucchini fries are best served hot and fresh, enjoyed on their own, or paired with a flavorful dipping sauce like marinara or a creamy garlic sauce. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the air fryer for a few minutes to regain their crispiness.
