  • 2 cups Steamed rice Cook according to package instructions.
  • 2 cups Fresh vegetables Like bell peppers, cucumbers, and carrots, chopped into bite-sized pieces.
  • 1 medium Avocado Sliced.
  • 1/2 cup Bang bang sauce A mix of mayonnaise, sweet chili sauce, and sriracha.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the salmon into bite-sized pieces, then season with olive oil, salt, and pepper.
  • Toss the salmon pieces in cornstarch until well-coated.
  • Prepare the fresh vegetables by chopping them into bite-sized pieces.

Cooking

  • Bake the salmon bites for 12-15 minutes or until they turn crispy.
  • Cook the rice according to package instructions.

Assembly

  • Assemble the bowls with a base of rice, topped with crispy salmon bites, fresh vegetables, and sliced avocado.
  • Drizzle with bang bang sauce and serve.

Notes

To store leftovers, place any uneaten salmon bites and vegetables in an airtight container in the refrigerator for up to two days. Reheat the salmon in the oven to retain its crispy texture, and only add the avocado and sauce right before serving.
