  • Heat the olive oil in a non-stick skillet over medium heat.
  • Once the oil is hot, carefully crack the eggs into the skillet, ensuring they remain separate.
  • Cook the eggs undisturbed for about 3-4 minutes, or until the edges are golden and crispy.
  • While the eggs cook, sprinkle the crumbled feta cheese over the eggs, allowing it to soften slightly as they fry.
  • Season with salt and pepper to taste.
  • Once the whites are crispy and the yolks are cooked to your liking, remove the skillet from heat.
  • Carefully transfer the eggs to a plate and garnish with fresh herbs if desired.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to two days. Reheat in a skillet over low heat to maintain crispy texture. Use a non-stick pan and don’t rush the heat to ensure perfect frying. Consider using goat cheese or cotija as alternatives to feta.
