Ingredients

For the salmon

  • 4 pieces salmon fillets Fillets should be skinless for best results.
  • 1/4 cup orange juice Freshly squeezed preferred.
  • 2 tablespoons soy sauce or tamari Use tamari for gluten-free options.
  • 2 tablespoons olive oil Extra may be needed for cooking vegetables.
  • 1 cup rice Use jasmine or basmati for the best flavor.
  • 2 cups mixed vegetables Include bell peppers, broccoli, and carrots.

  • 2 tablespoons green onions Chopped, for garnish.

Instructions

Preparation

  • Marinate the salmon fillets in orange juice, soy sauce, olive oil, salt, and pepper for about 15 minutes.
  • Cook rice according to package instructions.

Cooking

  • Heat olive oil in a pan over medium heat. Remove marinated salmon and cook for 4-5 minutes on each side until crispy.
  • In the same pan, add more olive oil if necessary and sauté mixed vegetables until tender but still vibrant.

Serving

  • Scoop rice into a bowl, layer with crispy salmon, sautéed vegetables, and finish with green onions.
