  • 1/2 cup all-purpose flour Can substitute with gluten-free flour
  • 2 large eggs
  • 1/4 cup fresh herbs (like parsley or dill), chopped Customize based on preference
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying Use enough to coat the bottom of the pan

Instructions

Preparation

  • Begin by grating the zucchinis and squeezing out the excess moisture using a clean towel.
  • In a large bowl, combine the grated zucchini with the feta cheese, flour, eggs, chopped herbs, garlic powder, salt, and pepper. Mix until everything is well incorporated.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Scoop spoonfuls of the mixture into the pan and flatten them slightly.
  • Fry until they are golden brown on both sides, which takes about 3-4 minutes per side.
  • Once cooked, remove them from the pan and place them on paper towels to drain excess oil.

Serving

  • Serve warm as a delicious snack or light meal paired with a yogurt dip or a spicy tomato sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze with parchment paper between layers. Reheat in the oven to restore crispiness. For flavor variations, you can add a pinch of paprika or chili flakes.
