  • 2 eggs, beaten

  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Shred zucchini and sprinkle with salt in a colander. Let it sit for 10 minutes, then squeeze out excess liquid.
  • In a bowl, combine zucchini, flour, bread crumbs, Parmesan cheese, eggs, green onions, salt, and pepper.
  • Form mixture into patties and fry in olive oil until golden brown. Drain on paper towels.
  • Enjoy the zucchini fritters hot, topped with sour cream if desired.
