  • 2 large eggs
  • 1 cup shredded cheese (mozzarella or cheddar)

  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped fresh herbs (optional)
  • Oil for frying

Preparation

  • Grate the zucchinis and place them in a clean kitchen towel, squeezing out excess moisture.
  • In a large bowl, combine the grated zucchini, eggs, cheese, flour, salt, pepper, garlic powder, and optional herbs. Mix until well combined.

Cooking

  • Heat oil in a skillet over medium heat until it shimmers.
  • Spoon heaping tablespoons of the batter into the skillet, flattening them slightly with the back of your spoon.
  • Fry for about 4-5 minutes on each side until they are golden brown and crispy.
  • Drain on paper towels and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For best texture, reheat in a skillet.
