Instructions

Preparation

  • Grate the zucchinis using a box grater and squeeze out as much moisture as possible to ensure they are crispy.
  • In a large mixing bowl, combine the grated zucchini, shredded cheese, flour, breadcrumbs, beaten egg, minced garlic, salt, and pepper. Mix until everything is well incorporated.

Cooking

  • In a skillet, heat a generous amount of olive oil over medium heat.
  • Use a tablespoon to scoop the zucchini mixture into the pan, flattening them slightly with the back of the spoon.
  • Fry the fritters for about 3-4 minutes on each side or until they are golden and crispy.
  • After frying, let the fritters drain on paper towels to remove excess oil before serving warm.

Notes

For serving, pair fritters with a refreshing salad or dip them in sauces like tzatziki or spicy aioli. Proper moisture removal and not overcrowding the pan are key to crispiness. Leftovers can be stored in an airtight container in the fridge for up to three days or frozen with parchment paper between layers.
