  • 2 pounds boneless, skinless chicken breasts
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

  • Place the chicken breasts in the bottom of the crock pot.
  • Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in heavy cream and Parmesan cheese, mixing until well combined.
  • Cook for an additional 30 minutes on low to let flavors meld.
  • Serve warm, garnished with fresh basil if desired.

Notes

For added flavor, sauté garlic and onion before adding them to the crock pot. Adjust soup consistency with more or less broth. Add red pepper flakes for spice. Use homemade broth for a more robust flavor. Store leftovers in an airtight container for up to 3 days, reheat gently.
