Ingredients

Main Ingredients

  • 2 pounds sirloin steak, cut into 1-inch cubes Choose well-marbled sirloin for extra flavor and tenderness.
  • 4 large russet potatoes, diced
  • 1 onion, chopped For added depth, you can sauté before adding to the crockpot.
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese Add about 30 minutes before serving.
  • 1/2 cup sour cream Add about 30 minutes before serving.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika Can sprinkle more on top for garnish.
  • Salt and pepper to taste Feel free to adjust the seasoning as desired.
  • Chopped green onions for garnish Garnish before serving.

Instructions

Preparation

  • In the crockpot, add the sirloin steak, diced russet potatoes, chopped onion, minced garlic, beef broth, Worcestershire sauce, paprika, salt, and pepper.
  • Stir to combine all ingredients.

Cooking

  • Cover and cook on low for 7-8 hours or on high for 4-5 hours until the steak and potatoes are tender.
  • About 30 minutes before serving, stir in the shredded cheddar cheese and sour cream.
  • Once cooked, garnish with chopped green onions before serving.

Notes

This dish is best served warm, straight from the crockpot! Pair with a simple side salad or crusty bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm it in the microwave or on the stovetop. This dish freezes well; just make sure to leave out the sour cream and cheese if freezing.
