  • 3 small cucumbers Choose firm cucumbers for best flavor.
  • 1 small carrot Grated.
  • 1 tomato Diced.
  • 1/4 small red onion Thinly sliced.
  • 2 hard-boiled eggs hard-boiled eggs Cut into quarters for garnish.

Dressing

  • 1 tablespoon vinegar
  • 4 tablespoons mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 1 tablespoon honey Adjust sweetness to taste.

Preparation

  • Wash and slice the cucumbers into rounds.
  • Grate the carrot.
  • Dice the tomato and thinly slice the red onion.
  • In a bowl, combine the cucumbers, carrot, tomato, and onion.

Dressing Preparation

  • In another bowl, whisk together the vinegar, mayonnaise, and honey.

Combine and Serve

  • Pour the dressing over the vegetables and mix well.
  • Cut the hard-boiled eggs into quarters and place them on top of the salad.
  • Serve chilled for a refreshing treat.

Notes

Serve the salad chilled, garnished with quartered hard-boiled eggs on top. Pairs well with grilled meats, sandwiches, or can be enjoyed on its own as a light meal. For added crunch, consider sprinkling some sunflower seeds or chopped nuts just before serving. Store leftovers in an airtight container in the refrigerator, best consumed within 1-2 days.
