Ingredients

Salad Ingredients

  • 1 lb Roma tomatoes
  • 1 each English cucumber
  • 1/2 medium red onion (sliced)
  • 2 each avocados (diced) Choose ripe avocados for best flavor.
  • 2 Tbsp extra virgin olive oil or sunflower oil
  • 2 Tbsp fresh lemon juice (from 1 medium lemon) Substitute lime juice for a different flavor.
  • 1/4 cup cilantro, chopped Or 1/2 bunch.
  • 1 tsp sea salt (or 3/4 tsp table salt)
  • 1/8 tsp black pepper Add cayenne pepper or red pepper flakes for heat.

Preparation

  • Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
  • Drizzle with olive oil and lemon juice. Toss gently to combine.
  • Just before serving, toss with sea salt and black pepper.

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator and consume the same day to prevent avocados from browning. Prepare ingredients ahead of time but add avocado and dressing just before serving.
