Ingredients
  

Main Ingredients

  • 2 pieces soft-boiled eggs cooked 6 to 7 minutes
  • 1 piece ripe but firm avocado diced
  • 1/2 piece mango cubed
  • 8 pieces cherry tomatoes halved
  • 6 pieces mozzarella balls or 1 whole ball cut into pieces
  • 1 small handful arugula or microgreens
  • a few pieces peas optional
  • Fresh herbs (parsley, chives, or cilantro)

Preparation

  • Cook the soft-boiled eggs for 6 to 7 minutes, then peel and set aside.
  • Dice the avocado and cube the mango. Halve the cherry tomatoes and cut the mozzarella if using a whole ball.

Assembly

  • In a large bowl, combine the avocado, mango, tomatoes, mozzarella, arugula, and optional peas.
  • Peel and slice the soft-boiled eggs and add them to the salad.
  • Toss with fresh herbs, and season to taste before serving.

Notes

Serve this salad chilled or at room temperature. It can be a standalone meal or paired with grilled chicken or fish. Drizzle with your favorite dressing or a squeeze of lemon juice. Store leftovers in an airtight container in the refrigerator and consume within a day for freshness.
