Ingredients

Wet Ingredients

  • 2 pieces eggs Large eggs
  • 150 g plain yogurt (or Greek yogurt) For added moisture
  • 50 ml honey or maple syrup Natural sweeteners
  • 1 tsp vanilla extract For flavor enhancement

Dry Ingredients

  • 150 g oats Use whole grain for added nutrition
  • 1 packet baking powder Leavening agent for the cake
  • 1 tsp cinnamon Adds warmth and flavor
  • A pinch salt Enhances the overall flavor

Fruits

  • 100 g fresh or frozen blueberries Provides natural sweetness and flavor
  • 2 pieces grated apples Use ripe apples for sweetness

Instructions

Preparation

  • Preheat your oven to 180°C (350°F).
  • In a large mixing bowl, combine the oats, baking powder, cinnamon, and a pinch of salt.
  • Stir in the eggs, yogurt, honey, and vanilla extract. Mix vigorously until you have a smooth, homogeneous batter.
  • Gently fold in the grated apples and blueberries, taking care not to crush them.

Baking

  • Line a baking tin with parchment paper and pour the mixture in, spreading it evenly.
  • Bake for 30 minutes, then check if it’s done by inserting a knife into the center; it should come out clean.
  • Once baked, let the cake cool in the tin for a few minutes before transferring it to a wire rack to cool completely.

Notes

For serving, slice the cake into squares. It pairs well with Greek yogurt or a drizzle of honey. Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for one week. For longer preservation, freeze individual pieces.
