Preparation
Gather all your ingredients and place crackers on a clean work surface or tray.
In a medium bowl, add the softened cream cheese, garlic powder, and chopped fresh dill. Season with a pinch of salt if needed.
Use a rubber spatula or electric mixer on low to beat the mixture until smooth and evenly combined. Taste and adjust garlic or dill.
Spoon or pipe about 1 teaspoon of the cheese mixture on half of the Ritz crackers. Spread evenly to the edges but avoid overfilling.
Place one dill pickle slice on top of the cheese layer. Top with another Ritz cracker to create a bite-sized sandwich.
Arrange assembled bites in a single layer on a platter or baking sheet. Cover loosely with plastic wrap and refrigerate for about 30 minutes to let the cheese set.
Serve chilled or at cool room temperature within an hour of removing from the fridge.
Notes
Store assembled bites in an airtight container for up to 24 hours. You can make the cream cheese mixture up to 48 hours in advance. Not recommended for freezing.
