Ingredients

Chicken and Seasoning

  • 3 pieces boneless, skinless chicken breasts (about 1 ½ pounds), sliced in half horizontally
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Dressing and Topping

  • ½ cup dill pickle ranch dressing, plus more for serving
  • 1 cup grated Parmesan cheese, divided
  • 3 tablespoons plain breadcrumbs
  • to taste Fresh dill, chopped

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  • Season the chicken breasts with kosher salt, black pepper, garlic powder, onion powder, and paprika.
  • In a bowl, mix together the dill pickle ranch dressing and ¾ cup of the grated Parmesan cheese.
  • Dip each seasoned chicken breast into the dressing mixture, coating it thoroughly, and then place it on the prepared baking sheet.
  • In another bowl, combine the remaining Parmesan cheese and breadcrumbs. Sprinkle this mixture generously over the dressed chicken breasts.

Cooking

  • Bake the chicken for 25-30 minutes or until it reaches an internal temperature of 165°F (75°C) and the topping is golden brown.
  • Once baked, remove from the oven and let it rest for a few minutes.
  • Serve with additional dill pickle ranch dressing and a sprinkle of fresh dill.

Notes

To store any leftovers, allow the chicken to cool to room temperature before placing it in an airtight container. Store in the refrigerator for up to 3 days. For extra flavor, marinate the chicken in the dill pickle ranch dressing for a few hours before baking.
