  • 1 pound ground beef
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste

Preparation

  • In a large skillet, brown the ground beef over medium heat. Drain the excess fat.
  • Add the onion, bell pepper, celery, and garlic to the skillet. Cook until the vegetables are tender.
  • Stir in the Cajun seasoning and cook for another minute to release its flavors.
  • Add the rice to the mixture and stir to combine it well with the meat and vegetables.
  • Pour in the chicken broth and season with salt and pepper. Bring to a boil.
  • Reduce the heat, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  • Fluff the rice with a fork, garnish with green onions, and serve hot.

Notes

Serve with cornbread or a side salad. For added flavor, consider hot sauce or pairing with fried chicken or grilled shrimp. To store leftovers, let cool before transferring to an airtight container. Refrigerate for up to three days or freeze in portions.
