Ingredients

Sauce Base

  • 4 cloves Fresh garlic Use fresh garlic, not jarred.
  • 1 stick Butter Use unsalted butter.
  • 1 cup Heavy cream You can substitute with half-and-half or whole milk, but consistency will vary.
  • 1 cup Grated Parmesan cheese Use real Parmesan for best flavor; pre-shredded is less effective.
  • 1 pinch Salt To taste.
  • 1 dash Black pepper Optional, for added flavor.
  • 1 sprinkle Italian seasoning Optional, for flavor variation.

Instructions

Preparation

  • Melt the butter in a small saucepan over low heat until it dances, but does not smoke.
  • Smash and add fresh garlic to the pan and sauté for about 2 minutes, until fragrant.
  • Pour in the heavy cream and increase the heat slightly to let it bubble gently.
  • Gradually sprinkle in the grated Parmesan cheese, stirring continuously until it thickens and is well combined.
  • Add a pinch of salt and optional black pepper or Italian seasoning. Stir well.
  • Taste the sauce. If it needs more tang, add a spoonful of cream cheese.
  • Keep stirring until the sauce coats the back of a spoon and is smooth.

Notes

Expect your kitchen to smell amazing! Serve with pizza, fries, or vegetables. The sauce can be stored in a tight container in the refrigerator for up to 5 days. Thin it out with milk if it thickens too much during storage.
