Melt the butter in a small saucepan over low heat until it dances, but does not smoke.
Smash and add fresh garlic to the pan and sauté for about 2 minutes, until fragrant.
Pour in the heavy cream and increase the heat slightly to let it bubble gently.
Gradually sprinkle in the grated Parmesan cheese, stirring continuously until it thickens and is well combined.
Add a pinch of salt and optional black pepper or Italian seasoning. Stir well.
Taste the sauce. If it needs more tang, add a spoonful of cream cheese.
Keep stirring until the sauce coats the back of a spoon and is smooth.
