Ingredients
  

Cheesecake Base

  • 2 1/4 cups vanilla wafer crumbs
  • 1/2 cup salted butter, melted
  • 3 tablespoons sugar
  • 3 tablespoons sprinkles
  • 24 ounces cream cheese, room temperature
  • 1 cup sugar
  • 9 tablespoons all-purpose flour, divided
  • 1 cup sour cream
  • 2 tablespoons vanilla extract
  • 4 large eggs, room temperature
  • 5 tablespoons sprinkles
  • 1 16 oz can Betty Crocker Rainbow Chip Frosting
  • 1 cup mini nilla wafers, divided

Blue Buttercream Frosting

  • 1/2 cup butter, room temperature
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons cream or water
  • Blue gel icing color

Instructions
 

Making the Cheesecake

  • Prepare the cheesecake base by mixing vanilla wafer crumbs, melted butter, sugar, and sprinkles. Press into the base of a springform pan.
  • In a large bowl, beat cream cheese until smooth. Add sugar, flour, sour cream, and vanilla extract. Mix until combined.
  • Add eggs one at a time, mixing well after each addition. Fold in sprinkles and pour batter into the prepared pan.

Decorating the Cheesecake

  • Bake the cheesecake and allow it to cool. Prepare the blue buttercream and spread some rainbow chip frosting on top of the cheesecake.
  • Pipe the blue frosting around the edges. Decorate with additional sprinkles and Dunkaroo cookies.

Notes

Make sure to chill the cheesecake well before decorating it with the buttercream frosting and toppings.
