Ingredients

For the apple filling

  • 6 large Golden Delicious apples, peeled and chopped (approx. 6-7 cups)
  • 2 tbsp granulated sugar
  • 3/4 tsp ground cinnamon
  • 1 1/2 tsp fresh lemon juice

For the crumb topping

  • 1 cup light brown sugar, packed
  • 3/4 cup old fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1 pinch kosher salt
  • 1/2 cup unsalted butter, ice-cold and diced into cubes

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish with butter or non-stick cooking spray.
  • In a large bowl, toss your chopped apples with the granulated sugar, 3/4 teaspoon of ground cinnamon, and fresh lemon juice until well coated. Transfer this apple mixture into your prepared baking dish.
  • In a separate bowl, combine the light brown sugar, old fashioned oats, flour, the remaining 1 teaspoon of ground cinnamon, and a pinch of salt.
  • Incorporate the ice-cold, cubed butter into the oat mixture, cutting it in using a pastry cutter or your fingertips until it resembles uniform, pea-sized crumbs.

Assembly and Baking

  • Evenly scatter the streusel topping over the spiced apple layer and gently pat it down to level the top.
  • Bake for 45 minutes, or until the oat topping turns a beautiful dark golden brown and the sweet fruit juices bubble up around the edges.

Notes

Serve warm with a scoop of vanilla ice cream and drizzled caramel sauce. Store leftovers in an airtight container in the refrigerator for 3 to 5 days.
