Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Wrap each apple wedge in crescent dough and arrange them in the greased dish, seam side down.
In a saucepan over medium heat, melt the butter. Stir in the granulated sugar and vanilla extract, but do not bring to a boil.
Evenly pour the butter mixture over the dumplings.
Pour the lemon-lime soda around the dumplings, avoiding pouring it directly on top.
Sprinkle ground cinnamon uniformly over the entire dish.
Baking
Bake uncovered for 35–40 minutes, or until the dumplings are golden and bubbling.
Allow to rest for a few minutes and serve warm, optionally topped with a scoop of ice cream.
