Ingredients
  

  • 175 grams plain flour or all-purpose flour
  • 135 grams brown sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • Zest of 1 large orange orange, finely grated
  • 95 grams whole almonds
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 180 C (350 F) standard or 160 C (320 F) fan-forced. Line a baking tray with parchment paper.
  • In a large bowl, mix flour, brown sugar, baking powder, salt, orange zest, and almonds. Add eggs and vanilla, stirring until a sticky dough forms.
  • Divide the dough into two and shape into logs. Bake for 20 minutes, then cool slightly before slicing diagonally into 1-inch wide pieces. Bake again for 18-20 minutes until golden brown. Let cool completely.
