Crust

  • 1 1/2 cups graham cracker crumbs
  • 2 tbsp sugar
  • 6 tbsp butter, melted

Cheesecake Filling

  • 24 ounces cream cheese, room temperature
  • 1 cup sugar
  • 3 tbsp all-purpose flour
  • 3/4 cup sour cream, room temperature
  • 1 1/2 tbsp vanilla extract
  • 3 large eggs, room temperature

Blueberry Swirl Sauce

  • 2 1/2 tsp cornstarch
  • 1 tsp fresh lemon juice
  • 1 tbsp warm water
  • 2 1/2 cups fresh or frozen blueberries
  • 1/4 cup sugar

How to Make Easy Blueberry Swirl Cheesecake

  • Combine cornstarch, lemon juice, and warm water. Cook blueberries and sugar, then add cornstarch mixture. Puree and strain.
  • Preheat oven, mix crust ingredients, press into pan, combine and pour filling over crust, add drops of blueberry sauce, swirl, and bake.
  • Cool cheesecake in the oven and on the counter, then refrigerate for 3-4 hours.

Notes

Achieve a marbled effect by gently swirling the blueberry sauce into the cheesecake batter for a visually appealing finish.
