Ingredients
  

Tomato Basil Topping

  • 2 cups diced Roma tomatoes
  • 1 head garlic, minced
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 5 tbsp fresh chopped basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 4 slices mozzarella cheese

Instructions
 

  • In a bowl, combine diced tomatoes, minced garlic, olive oil, balsamic vinegar, chopped basil, salt, and black pepper. Set aside.
  • Coat chicken breasts with olive oil. Mix Italian seasoning, garlic powder, salt, and black pepper; coat chicken evenly with the seasoning.
  • Grill chicken over high heat for 6-8 minutes per side until cooked. Top with mozzarella and let it melt.
  • Let the chicken rest, then spoon tomato basil topping over each piece. Drizzle with balsamic glaze.

Notes

For an extra kick, add a sprinkle of red pepper flakes to the tomato basil topping.
