Instructions
Preparation
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together the cottage cheese and eggs until smooth and well combined.
Stir in the shredded cheese and your choice of chopped vegetables, mixing thoroughly.
Season the mixture with salt, pepper, and any optional herbs or spices to enhance the flavor.
Grease a muffin tin or use silicone molds to prevent sticking.
Pour the egg mixture into the molds, filling each about two-thirds of the way full.
Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
Allow to cool slightly before gently removing them from the molds. Enjoy as a healthy breakfast on the go!
