Preparation
Preheat the oven to 200°F to keep the cooked croissants warm as you work in batches.
Slice the croissants in half horizontally.
In a large mixing bowl, whisk together eggs, egg yolks, milk, Grand Marnier (or vanilla), honey, cinnamon, and salt until smooth.
Pour the mixture into a shallow dish for easy dipping.
Cooking
Heat a large skillet over medium-low heat and melt 2 tablespoons of butter.
Dip the croissant halves into the egg mixture, ensuring they are well-soaked on both sides. Let any excess drip back into the dish.
Place the croissants, cut side down, in the skillet.
Cook for 3 to 4 minutes until golden brown, then flip and cook for another 2 to 3 minutes.
Transfer the cooked croissants to a baking sheet and keep warm in the preheated oven.
Serving
Once all croissants are cooked, arrange them on a serving platter.
Garnish with fresh berries, dust with confectioners’ sugar, and drizzle with maple syrup or add whipped cream if desired.
Notes
For extra flavor, add a splash of orange zest to the egg mixture. Avoid overcrowding the skillet when cooking. Soak croissants briefly to prevent them from falling apart.
