1/3cupvegetable oil, shortening, or lardUse any of these fats based on preference.

Instructions
Stand Mixer Instructions
In a stand mixer bowl, combine the flour, salt, and baking powder. Mix well until evenly distributed.
Add the oil (or shortening/lard) and mix on low speed until the mixture resembles coarse crumbs.
Gradually pour in the hot water while mixing, until a dough starts to form.
Knead the dough on low speed for about 5 minutes until smooth and elastic.
Divide the dough into 10-12 equal portions and let them rest for 15-20 minutes, covered with a cloth.
Mix by Hand Instructions
In a large mixing bowl, combine the flour, salt, and baking powder thoroughly.
Add the oil (or shortening/lard) and use your fingers to mix until it resembles coarse crumbs.
Gradually add the hot water, stirring with a wooden spoon until a dough forms.
Transfer to a floured surface and knead the dough for approximately 5 minutes until smooth and elastic.
Divide the dough into 10-12 equal portions and allow them to rest for 15-20 minutes, covered with a cloth.
Cooking
After resting, heat a skillet or griddle over medium-high heat.
Roll out each dough ball into a thin circle, about 1/8 inch thick.
Cook the tortillas for about 30 seconds on each side until lightly browned and puffed.
Keep the cooked tortillas warm in a towel until ready to serve.
Notes
Store leftover tortillas in an airtight container in the refrigerator for up to a week. For longer storage, freeze them in a stack, separated by parchment paper.
