Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
In a large bowl, mix together the grated zucchini and peanut butter until well combined.
Add in the maple syrup, cocoa powder, baking soda, salt, and vanilla extract. Stir until smooth.
If desired, fold in the dairy-free chocolate chips.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean.
Allow to cool before cutting into squares and enjoy!
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for longer storage. Allow to cool before cutting for cleaner edges. Experiment with different nut butters or sweeteners.
