  • 1 cup grated zucchini Grated finely for better texture.
  • 1/2 cup peanut butter Can be substituted with almond butter.
  • 1/4 cup maple syrup or agave nectar Any sweetener of choice can be used.
  • 1/2 cup cocoa powder Ensure it is unsweetened.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup dairy-free chocolate chips Optional ingredient.

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  • In a large bowl, mix together the grated zucchini and peanut butter until well combined.
  • Add in the maple syrup, cocoa powder, baking soda, salt, and vanilla extract. Stir until smooth.
  • If desired, fold in the dairy-free chocolate chips.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean.
  • Allow to cool before cutting into squares and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for longer storage. Allow to cool before cutting for cleaner edges. Experiment with different nut butters or sweeteners.
