Ingredients

Pancake Batter

  • 1/2 cup low-fat cottage cheese
  • 1/2 cup egg whites
  • 30 g unflavored whey protein powder
  • 1 cup pancake mix
  • 1/2 cup water

Cooking Spray

  • to taste Oil or butter spray for the pan

Instructions

Preparation

  • Combine all the ingredients, excluding the oil spray, in a small blender. Blend everything for about 15 seconds, or until the mixture is smooth.
  • Preheat a nonstick skillet over medium-high heat for about 30 seconds.

Cooking

  • Pour around 1/3 cup of batter into the pan and spread it gently to form a circle about 6 inches in diameter.
  • Cook for approximately 2 minutes, watching for bubbles to form on top, signaling that it's time to flip.
  • Flip and cook for an additional 20 to 30 seconds.
  • Once cooked, remove from the pan onto a clean plate or platter. Repeat with the remaining batter until all pancakes are made.

Serving

  • Serve warm, garnished with your favorite toppings.

Notes

For extra fluffy pancakes, avoid over-blending your batter. You can also add spices like cinnamon or vanilla for extra flavor. Feel free to incorporate berries for a fruitier twist.
