Ingredients

Main Ingredients

  • 1 pound ground turkey or chicken Lean protein source
  • 1 can black beans, drained and rinsed Adds fiber and protein
  • 1 can corn, drained Sweetens the soup
  • 1 can diced tomatoes Base of the soup
  • 1 packet taco seasoning For flavor
  • 4 cups chicken broth Provides the soup base
  • 1 cup diced onions Adds sweetness and depth
  • 1 cup diced bell peppers For added flavor and nutrients
  • 1 clove garlic, minced Enhances flavor
  • Salt and pepper to taste To season

Instructions

Cooking Preparation

  • In a skillet, brown the ground turkey or chicken over medium heat, then transfer to the slow cooker or Instant Pot.
  • Add the black beans, corn, diced tomatoes, taco seasoning, chicken broth, onions, bell peppers, and garlic.
  • Stir everything together and season with salt and pepper.
  • For the crock pot, set on low for 6-8 hours or high for 3-4 hours. For the Instant Pot, seal the lid and cook on high pressure for 10 minutes, then do a quick release.
  • Stir well before serving. Enjoy your taco soup!

Notes

Leftover soup can be stored in an airtight container in the refrigerator for up to three days. Freeze individual portions for up to three months. Stir well when reheating. For added flavor, use fresh herbs and vegetables.
