1/2cupUnsalted butter, melted
Filling
8ouncesDark chocolate (60% Cacao)
1 1/4cupsHeavy whipping creamdivided
1/2cupPowdered sugar
16ouncesFull-fat cream cheese, at room temperature
1/2cupGranulated sugar
1teaspoonPure vanilla extract
1cupHeavy whipping cream
1/2cupPowdered sugar
Instructions
Crush Oreos in a food processor and mix with melted butter. Press into a pan for the crust.
Melt dark chocolate with 1/4 cup of heavy cream. Set aside to cool. Whip 1 1/2 cups of heavy cream and powdered sugar until stiff peaks form.
In a separate bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Fold in the whipped cream. Layer the filling over the crust and chill for a few hours or overnight.
Prepare whipped cream with powdered sugar for topping. Pipe borders on the cheesecake and garnish with fresh fruit.
