1/2cupmarinara sauceCan substitute with BBQ sauce or pesto.
1/2cupmozzarella cheeseConsider part-skim for a lighter option.

Instructions
Preparation
Preheat the oven to 425 degrees Fahrenheit.
Slice the zucchini into 1/4 inch rounds and place them on a baking tray lined with parchment paper or aluminum foil (sprayed with non-stick cooking spray).
Brush the top side of each zucchini round with olive oil, season with salt and pepper, and bake for 2 minutes.
After 2 minutes, flip each zucchini round, brush with more olive oil, season, and return to the oven for an additional 1 to 2 minutes.
Topping and Broiling
Remove from the oven and add a spoonful of marinara sauce on top of each round.
Divide the mozzarella cheese evenly over them, and sprinkle with Parmesan on top.
Turn the oven up to broil and place the tray under the broiler for 1 to 2 minutes or until the cheese is hot and bubbly.
Let cool slightly before serving.
