Ingredients

Main Ingredients

  • 1 large zucchini Choose firm, medium-sized zucchinis.
  • 1/4 cup olive oil For brushing the zucchini slices.
  • 1/2 cup marinara sauce Can substitute with BBQ sauce or pesto.
  • 1/2 cup mozzarella cheese Consider part-skim for a lighter option.
  • 1/4 cup Parmesan cheese Can be omitted or replaced with goat cheese.
  • Salt and pepper To taste.

Instructions

Preparation

  • Preheat the oven to 425 degrees Fahrenheit.
  • Slice the zucchini into 1/4 inch rounds and place them on a baking tray lined with parchment paper or aluminum foil (sprayed with non-stick cooking spray).
  • Brush the top side of each zucchini round with olive oil, season with salt and pepper, and bake for 2 minutes.
  • After 2 minutes, flip each zucchini round, brush with more olive oil, season, and return to the oven for an additional 1 to 2 minutes.

Topping and Broiling

  • Remove from the oven and add a spoonful of marinara sauce on top of each round.
  • Divide the mozzarella cheese evenly over them, and sprinkle with Parmesan on top.
  • Turn the oven up to broil and place the tray under the broiler for 1 to 2 minutes or until the cheese is hot and bubbly.
  • Let cool slightly before serving.

Notes

These bites pair wonderfully with a fresh garden salad or crunchy garlic bread. They can also be served with various dips like ranch or marinara.
