Ingredients

For the pancakes

  • 1/2 C Oats Blend for a smoother texture if preferred.
  • 1/2 C Cottage Cheese Can swap for Greek yogurt for different texture.
  • 1/2 C Egg Whites
  • 1/2 C Milk (cashew milk recommended) Can substitute with regular milk.
  • 1 t Baking Powder Optional ingredient.
  • 2 pinches Salt
  • 1 t Vanilla
  • 2 scoops Vanilla Protein Powder

Instructions

Preparation

  • Blend the oats for a smoother texture (optional).
  • In a large bowl, combine the cottage cheese, egg whites, milk, baking powder, salt, vanilla, and protein powder.
  • Mix until you have a smooth batter.

Cooking

  • Heat a skillet or griddle over medium-low heat and spray with non-stick cooking spray.
  • Pour the pancake batter into circles on the skillet, leaving space for expansion.
  • Cook until the pancakes puff up and then slightly flatten; flip them when golden.
  • Serve as desired.

Notes

Serve with maple syrup, fresh fruits, or yogurt. Allow leftovers to cool and store in an airtight container for 3-4 days in the fridge. Freeze for longer storage.
