Ingredients

For the cloud bread

  • 1/2 cup cottage cheese
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 teaspoon honey or sugar (optional)

Instructions

Preparation

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cottage cheese with the egg yolks and mix until smooth.
  • In a separate bowl, whip the egg whites with the cream of tartar until stiff peaks form.
  • Gently fold the egg whites into the cottage cheese mixture.
  • Add the baking powder, salt, and optional seasonings (garlic powder, honey, or sugar) to the mixture and fold until just combined.
  • Scoop the mixture onto the prepared baking sheet, forming small rounds.
  • Bake for about 25-30 minutes until golden and set.
  • Allow to cool before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can also be frozen for longer storage; wrap individual pieces and place in a freezer-safe bag.
