For the cloud bread
1/2cupcottage cheese
3largeeggs, separated
1/4teaspooncream of tartar
1/2teaspoonbaking powder
1/2teaspoonsalt
1/2teaspoongarlic powder (optional)

Preparation
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the cottage cheese with the egg yolks and mix until smooth.
In a separate bowl, whip the egg whites with the cream of tartar until stiff peaks form.
Gently fold the egg whites into the cottage cheese mixture.
Add the baking powder, salt, and optional seasonings (garlic powder, honey, or sugar) to the mixture and fold until just combined.
Scoop the mixture onto the prepared baking sheet, forming small rounds.
Bake for about 25-30 minutes until golden and set.
Allow to cool before serving.
Notes
Store in an airtight container in the refrigerator for up to a week. Can also be frozen for longer storage; wrap individual pieces and place in a freezer-safe bag.
