Instructions
Preparation
In a large pot, melt butter over medium heat.
Add the caramelized onions and cook for a couple of minutes until heated through.
Stir in the rice and cook for 2-3 minutes, allowing it to get coated in the butter.
Add the broth, and season with salt and pepper.
Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
Fluff rice with a fork, garnish with fresh parsley, and serve warm.
Notes
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat with a splash of broth or water over low heat.
