French Onion Chicken Casserole

A creamy, cheesy casserole made with rotisserie chicken topped with crunchy French-fried onions, this dish is perfect for busy weeknights and potlucks.

  • 4 cups cooked chopped chicken rotisserie or leftover roasted chicken works great
  • 1 cup shredded cheddar cheese sharp cheddar gives more flavor
  • 1 cup refrigerated sour cream French onion dip adds instant French onion flavor
  • 1 can (10.5-oz) unsalted cream of chicken soup use reduced-sodium if preferred
  • 1 can (2.8-oz) French fried onions reserve a few for sprinkling after baking if you like extra crunch

Preparation

  • Preheat the oven to 350°F (175°C). Lightly spray a 9x9-inch baking dish with cooking spray.
  • In a large bowl, combine the chopped cooked chicken and shredded cheddar.
  • Add the refrigerated French onion dip and the can of cream of chicken soup. Stir until the mixture is evenly combined and creamy.
  • Spread the chicken mixture into the prepared baking dish in an even layer.
  • Sprinkle the can of French fried onions evenly over the top.
  • Bake uncovered for 30 to 40 minutes, until the casserole is hot and bubbly and the onions on top are golden.
  • Remove from the oven and let rest 5 minutes before serving so the casserole settles and slices hold together.

Notes

Store in the refrigerator for up to 3-4 days or freeze for up to 2 months. Reheat in the microwave or in the oven for best results.
