Instructions
Preparing Steak Bites
Start by cutting the sirloin steak into 1-inch cubes and pat dry with paper towels.
Season the steak bites with salt, pepper, and paprika.
Heat up a cast iron skillet until hot, then add oil and sear steak bites in batches for 1-2 minutes per side.
Once browned, lower the heat and add butter, minced garlic, and rosemary or thyme. Spoon the garlic butter over the steak for 30 seconds.
Preparing Cheesy Smashed Potatoes
Boil small potatoes until fork-tender, about 15-20 minutes, then drain well.
Smash each potato on a baking sheet and drizzle with olive oil, salt, and pepper.
Bake in a 425°F (220°C) oven for about 20 minutes until crispy.
Sprinkle cheddar and mozzarella over each potato during the last 5 minutes of baking.
Notes
For best results, use room temperature steak and don't overcrowd the pan. Serve fresh for optimal taste.
