Steak Bites

  • 1 lb sirloin steak Cut into 1-inch cubes
  • 1 tbsp oil For cooking
  • 3 tbsp butter Unsalted
  • 4 cloves garlic, minced
  • 1 sprig rosemary or thyme For flavoring
  • to taste salt and pepper
  • to taste paprika Optional seasoning

Cheesy Smashed Potatoes

  • 1 lb small potatoes Baby reds or golds recommended
  • 1 tbsp olive oil Drizzle over smashed potatoes
  • 1 cup shredded cheddar cheese For topping
  • 1 cup shredded mozzarella cheese For topping
  • to taste salt and pepper
  • to taste garlic powder Optional seasoning
  • to taste chopped chives Optional garnish

Instructions
 

Preparing Steak Bites

  • Start by cutting the sirloin steak into 1-inch cubes and pat dry with paper towels.
  • Season the steak bites with salt, pepper, and paprika.
  • Heat up a cast iron skillet until hot, then add oil and sear steak bites in batches for 1-2 minutes per side.
  • Once browned, lower the heat and add butter, minced garlic, and rosemary or thyme. Spoon the garlic butter over the steak for 30 seconds.

Preparing Cheesy Smashed Potatoes

  • Boil small potatoes until fork-tender, about 15-20 minutes, then drain well.
  • Smash each potato on a baking sheet and drizzle with olive oil, salt, and pepper.
  • Bake in a 425°F (220°C) oven for about 20 minutes until crispy.
  • Sprinkle cheddar and mozzarella over each potato during the last 5 minutes of baking.

Notes

For best results, use room temperature steak and don't overcrowd the pan. Serve fresh for optimal taste.
