Ingredients

For the Chicken

  • 4 pieces Grilled garlic chicken breast
  • 1 teaspoon Paprika
  • 1 tablespoon Herbs assorted dried herbs

For the Potatoes

  • 4 cups Roasted potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Rosemary fresh or dried

For the Sides

  • 2 cups Steamed rice cooked
  • 4 cups Mixed greens
  • 1 cup Cherry tomatoes halved
  • 1/4 cup Balsamic dressing for salad

Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • Season the chicken breasts with paprika, herbs, salt, and pepper, then grill until cooked through.
  • Cut potatoes into wedges, toss with olive oil, rosemary, salt, and pepper, and roast in the oven for about 25-30 minutes or until golden brown.
  • Cook rice according to package instructions.

Salad Preparation

  • Prepare the salad with mixed greens, cherry tomatoes, and drizzle with balsamic dressing.

Serving

  • Serve the grilled chicken with roasted potatoes, steamed rice, and salad on the side.

Notes

For extra flavor, marinate the chicken in garlic and herbs for a few hours before grilling. Ensure the potatoes are cut into uniform pieces for even cooking. Don’t overcrowd the baking sheet when roasting the potatoes to achieve a crispy texture.
