Garlic Chicken Shawarma

A delightful Middle Eastern dish with succulent chicken marinated in garlic and spices, wrapped in warm pita bread or flatbreads.

Ingredients

Marinade Ingredients

  • 1 cup yogurt Plain yogurt works best.
  • 4 cloves garlic, minced Adjust according to taste.
  • 2 tablespoons olive oil Extra virgin preferred.
  • 2 tablespoons shawarma spices Blend of cumin, paprika, turmeric, cinnamon, etc.
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.

Main Ingredients

  • 2 pounds chicken thighs or breasts Boneless, skinless chicken is recommended.
  • 4 pieces pita bread or flatbreads For serving.
  • 1 cup Mediterranean garlic sauce or tahini sauce For topping.
  • 2 cups vegetables (tomatoes, cucumbers, onions, etc.) Chopped for serving.

Instructions

Preparation

  • In a bowl, mix together yogurt, minced garlic, shawarma spices, olive oil, lemon juice, salt, and pepper to make the marinade.
  • Add the chicken to the marinade, cover, and refrigerate for at least 1 hour or overnight for best results.

Cooking

  • Preheat the grill or oven to a medium-high heat.
  • Remove the chicken from the marinade and cook on the grill or in the oven until fully cooked, about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for a few minutes before slicing it thinly.

Serving

  • Serve the chicken in pita bread or flatbreads, topped with Mediterranean garlic sauce and your choice of vegetables.
  • Fold the pita around the fillings for a delicious handheld meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Marinated chicken can be frozen for up to 3 months.
