Ingredients

Vegetables

  • 1 lb baby potatoes (red or gold), halved
  • 1 cup baby carrots (or sliced regular carrots)
  • 1 cup fresh green beans, trimmed

Seasoning

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the baby potatoes, baby carrots, and green beans with olive oil, garlic, Italian seasoning, smoked paprika, salt, and black pepper until evenly coated.

Roasting

  • Spread the veggies in a single layer on a baking sheet.
  • Roast in the preheated oven for about 25-30 minutes, or until vegetables are tender and caramelized, stirring halfway through.
  • Remove from oven and serve warm.

Notes

For a zesty twist, consider adding lemon zest and juice before serving. You can also sprinkle some grated Parmesan cheese over the veggies just after they come out of the oven for a savory finish. Experiment with different herbs, such as rosemary or thyme, for an entirely new flavor profile.
