Garlic Parmesan Chicken Lasagna Roll-Ups

Ingredients

For the Roll-Ups

  • 12 pieces lasagna noodles, cooked and drained Boiled until al dente
  • 2 cups cooked chicken, shredded Rotisserie works great!
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Plus extra for topping
  • ½ cup grated Parmesan cheese Plus extra for topping
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

For the Garlic Parmesan Sauce

  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

Preparation

  • Boil the lasagna noodles according to package instructions until al dente. Drain and set aside.
  • In a mixing bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper. Mix until all ingredients are well incorporated.

Making the Sauce

  • In a saucepan, melt the unsalted butter over medium heat. Add minced garlic and sauté until fragrant.
  • Whisk in the flour and cook for 1-2 minutes. Gradually add the whole milk and chicken broth, stirring constantly until the sauce thickens.
  • Stir in the grated Parmesan, garlic powder, salt, and black pepper. Remove from heat.

Assembly

  • Spread a thin layer of the sauce on the bottom of a baking dish.
  • Take a lasagna noodle, place a few tablespoons of the chicken filling at one end, and roll it up tightly. Place the roll-up seam-side down in the dish. Repeat with the remaining noodles and filling.
  • Pour the remaining sauce over the assembled roll-ups and sprinkle with shredded mozzarella and grated Parmesan.

Baking

  • Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Serving

  • Let the roll-ups cool for a few minutes before serving. Enjoy your delicious Garlic Parmesan Chicken Lasagna Roll-Ups with a sprinkle of fresh parsley if desired!

Notes

For best results, use leftover chicken or rotisserie chicken. Add fresh herbs like basil or parsley for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
