A lighter and healthier alternative to traditional meatloaf, these Garlic Parmesan Chicken Meatloaves are packed with flavor from garlic, Parmesan cheese, and ground chicken.

  • 450 grams ground chicken The base of the meatloaf
  • 60 grams grated Parmesan cheese Adds a nutty flavor
  • 60 grams breadcrumbs Helps bind the mixture
  • 15 grams fresh parsley, finely chopped For freshness and color
  • 3 cloves garlic, minced Key flavor ingredient
  • 1 large egg, beaten Acts as a binder
  • 1 teaspoon dried oregano Herb flavoring
  • 0.5 teaspoon fine sea salt Enhances overall flavor
  • 0.25 teaspoon freshly ground black pepper Adds a bit of heat
  • 60 millilitres whole milk Keeps the meatloaf moist
  • 2 tablespoons extra virgin olive oil For drizzling before baking
  • 25 grams grated mozzarella cheese (optional) For extra cheesiness

Instructions

Preparation

  • Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  • In a large mixing bowl, thoroughly combine the ground chicken, Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, dried oregano, salt, and black pepper.
  • Add the milk to the mixture and mix gently until it becomes uniform and cohesive.
  • Divide the mixture evenly and shape it into four compact mini loaves. Place each one on the prepared baking sheet, ensuring there’s space between each.
  • Drizzle olive oil over each loaf. Optionally, sprinkle mozzarella cheese on top for added cheesiness.

Cooking

  • Bake for 25–30 minutes, or until they are golden and the internal temperature reaches 74°C (165°F).
  • Remove from the oven and allow to rest for 5 minutes before serving.

Notes

These meatloaves are best served hot. Store leftovers in an airtight container for up to three days, or freeze them for longer storage. Feel free to experiment with different herbs or add crushed red pepper flakes for a spicy kick.
