Instructions

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Wash and dry the baby potatoes, then toss them in a large bowl with olive oil, salt, and pepper.

Cooking

  • Spread the seasoned potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes until golden brown and fork-tender.
  • While the potatoes roast, melt butter in a pan over medium heat. Add minced garlic and sauté until fragrant.
  • Once roasted, combine the potatoes with the garlic sauce in the pan, tossing gently to coat.
  • Transfer to a serving platter, garnish with parsley if desired, and serve hot.

Notes

For extra flavor, consider adding herbs like rosemary or thyme before roasting. If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. To reheat, use the oven or microwave.
