Cake:
- 1/4 cup unsalted butter (56g) cut into cubes
- 1/2 cup brown sugar (105g) packed
- 1/2 cup whipping cream (120ml) around 35% MF
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt or any salt
- 3/4 cup molasses (180ml) do not use blackstrap
- 1/2 cup boiling water (120ml)
- 2 3/4 cup all-purpose flour (344g)
- 1 tablespoon ginger powder
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon baking powder
Mix butter, brown sugar, cream, vanilla, salt, and molasses. Add boiling water.
Combine flour, ginger, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt.
Beat melted butter, brown sugar, eggs, and vanilla. Alternately add dry ingredients and buttermilk. Bake.
