Ingredients

For the cookies

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the frosting

  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix rolled oats, flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  • In another bowl, cream together butter, brown sugar, and granulated sugar until smooth.
  • Beat in the egg and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture until combined.
  • Drop spoonfuls of dough onto the baking sheet, flattening slightly.

Baking

  • Bake for 10-12 minutes or until edges are firm.
  • Let cookies cool completely.

Frosting & Assembly

  • For the frosting, beat together cream cheese, powdered sugar, and vanilla until smooth.
  • Spread frosting on the flat side of a cookie and sandwich with another cookie.

Notes

Store in the refrigerator and enjoy! They can be served chilled or at room temperature. For a festive touch, add a sprinkle of cinnamon or a drizzle of caramel on top.
