Fritter Ingredients

  • 2 medium zucchinis, grated Look for firm zucchinis with smooth skin.
  • 1 cup gluten-free flour Use any preferred gluten-free flour.
  • 1/2 cup grated Parmesan cheese Optional; substitute with a vegan alternative for dairy-free.
  • 1/4 cup chopped fresh herbs Recommended: parsley and dill.
  • 1 whole lemon Zested and juiced.
  • to taste Salt
  • to taste Pepper
  • Olive oil for frying

Instructions

Preparation

  • Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  • In a large bowl, combine the grated zucchini, gluten-free flour, Parmesan cheese (if using), chopped herbs, lemon zest, lemon juice, salt, and pepper. Mix until well combined.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Scoop spoonfuls of the mixture into the skillet and flatten them slightly.
  • Cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Once done, remove from the skillet and place on a paper towel to drain any excess oil.

Notes

Serve warm with tzatziki, yogurt dip, or marinara sauce. For complete meals, pair with a fresh salad or grilled vegetables. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
