Preparation
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine almond flour, sugar, and baking powder.
In another bowl, cream the softened butter with almond extract, vanilla extract, and egg until smooth and fluffy.
Gradually mix the wet ingredients into the dry ingredients until the mixture is well combined.
Take small amounts of dough, flatten them in your palm, and place a spoonful of ricotta cheese in the center.
Fold the dough around the filling and shape into pillows.
Place the pillows on a baking sheet lined with parchment paper.
Bake for 15-20 minutes or until golden brown.
Allow to cool before serving.
