Ingredients

For the Tzatziki

  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber, grated squeezed dry
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tsp salt
  • 1/2 tsp pepper

For Serving

  • 2 cups cooked rice (white or brown)
  • 1 cup fresh veggies (e.g., diced tomatoes and bell peppers)

Instructions

Preparation

  • Preheat oven to 400°F (200°C).
  • In a bowl, mix ground chicken or turkey, breadcrumbs, parsley, garlic, salt, and pepper until combined.
  • Shape the mixture into one-inch meatballs and place on a parchment-lined baking sheet.

Cooking

  • Bake meatballs for 20-25 minutes until golden brown.
  • While meatballs bake, prepare tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, salt, and pepper in a bowl.
  • Cook rice according to package instructions.

Assembly

  • Assemble bowls with rice as the base topped with meatballs, fresh veggies, and tzatziki sauce.
